Quick and Easy Focaccia Sandwich

This is a great weeknight sandwich.  It’s quick, easy, and warm.

It starts with a store bought loaf of focaccia bread, sliced down the center, with store bought pesto on the bottom half.


My kindergartner loves helping make dinner.  Those are her little hands.  We covered the pesto with about 3/4 lb of good deli turkey.  (I’m not talking about slimy, cheap deli meat.)


The next layer is chopped sundried tomatoes, just a few.


Top it with provolone cheese, the other half of the bread, and it’s ready for the oven.

I wrapped it in a little foil and put it in the oven for about 20 minutes.

 
Just look at that cheesy, warm, sandwich!  My kids aren’t huge pesto fans, but they always eat things they cook themselves.  I was told that this was, “The best dinner ever!”

    Oh my goodness, Becca! This looks amazing. I love pesto more than pretty much any other thing and I'm also a huge sandwich fan. Delish!
