Snickerdoodle Cookies

I decided that my Snickerdoodle cookie recipe needed some updated pictures today. My brain has been playing tricks with me lately and movement is not my friend. I was trying to think of things to do that didn’t involve reading, scrolling, watching tv, videos, excessive movement, or too much thinking. (#strokebrain) Photography seems pretty harmless and I can type with my eyes closed, for the most part. Plus, I just found out that my son’s girlfriend and family haven’t tried Snickerdoodle cookies. Crazy!

Snickerdoodle Cookies

These are super soft cookies that are easy to make and sooo yummy.

Ingredients

1cup shortening
1 1/2cups sugar
2 eggs
2 3/4cups four
2tsp cream of tartar
1tsp baking soda
1/2tsp salt

Cinnamon Sugar

1/2cup sugar
1Tbsp cinnamon

Instructions

Mix shortening and sugar. Add eggs and mix. Add dry ingredients and mix. Using a cookie scoop, shape dough into balls. Roll dough balls in the cinnamon sugar mixture. I bake these cookies on a Silpat lined baking sheet, at 400 degrees, for 7 minutes.

Valentine Sugar Cookies

We’ve been snowed in for days and days and days! I was thinking that some of my local friends might be in need of a new recipe to try. I’ve posted this recipe many times, but I thought it might need to move to the top of the blog for Valentine’s Day. It’s my go-to recipe for any holiday or season.

Valentine Sugar Cookies

Ingredients

18Tbsp buttersoftened
1cup shortening
2 1/4 cups sugar
3 eggs
3Tbsp milk
1Tbsp vanilla
6cups flour
4 1/2tsp baking powder
1tsp salt

Instructions

Beat butter, shortening, and sugar in a large mixing bowl. Add eggs, milk, and vanilla. Add dry ingredients and mix. Let dough chill in the fridge for 3 hours. Roll dough on a cutting board, lightly dusted with flour. I like a thick cookie, so I roll my dough slightly thicker than 1/4" thick. Cut in any shape desired. Bake for 7-8 minutes at 375 degrees. Cool and frost. For the frosting, my favorite is a simple powdered sugar and milk frosting. I pour powdered sugar into the bowl and add just a little bit of milk. Keep stirring and slowly add milk until you get to the desired consistency. If you want a thick frosting, add less milk. If you want a glaze, add more milk. I try to use as little food coloring as possible because DYE IS EVIL. A tiny little half-drop of red food coloring will make a nice pink. I also found an all natural food coloring on Amazon, by McCormick. You can also use a little raspberry juice to make a nice pink and then you don't need to use dye at all, which is good because DYE IS EVIL! (Ask me how I feel about food dyes in our foods!) Peanut Butter Chocolate Chip Cookies – WITH NO FLOUR!

Ok, friends. I think I should just change the title of this post to Magic Cookies, because they HAVE to be magic. They have no flour, no butter, and no shortening… and they’re amazing! Magic, I’m telling you!

My naturopath shared this recipe with me because she know that I’m obsessed with baking.

**Side story. My naturopath is amazing. Her name is Dr. Rhian Young and she owns Purity Health. Any of you who have know me for any amount of time, in real life (outside of the web world), know that I’m CONSTANTLY sick. I can’t seem to catch a break between illness and injury. Well, I’ve been doing better and better each year. She’s been helping me figure things out one by one.**

Ok, back to the story. Dr. Young shared this cookie recipe with me and I was skeptical. How good could this cookie be without butter, shortening, or flour. She said her family said it was the best cookie she had ever made. So, I tried it. Ummm. Wow!

Flour-less Peanut Butter Chocolate Chip Cookie

Ingredients

1Cup Peanut Butter
1Cup Brown Sugarfirmly packed
1 egg
1tsp baking soda
1/2Cup Chocolate chips

Instructions

Mix peanut butter and brown sugar together. Add egg. Mix. Add baking soda. Mix. Add chocolate chips. Mix. Use a cookie scoop to put balls of cookie dough onto baking sheet. Bake at 350 degrees for 8-9 minutes.

Valentine’s Day is just around the corner, so we couldn’t resist baking a few sugar cookies to pack in lunches this week. This is my go-to recipe for sugar cookies of any shape.

Super Soft Gingerbread Cookie Recipe

The invention of the gingerbread cookie is right up there with the invention chocolate chips, in my book. This is one of those recipes that has been part of the Holidays for as long as I can remember. My mom says the recipe came from a newspaper many, many years ago. The original recipe calls these cookies Molasses Cookie Cutouts.

My mom had awesome cookie cutters when I was little. I loved her Halloween cookie cutters. They were orange plastic owl, witch, cat, and pumpkins. The gingerbread man was my favorite.

I found these pictures of cookie cutters for sale on Ebay. I think they are just like my mom’s.

A couple of years ago my sister-in-law and I decided to find them on Ebay. We were able to replace her broken gingerbread man and I bought one for myself too. These must have been really popular, back in the day, because they weren’t too hard to find.

I’m always asked what my recipe is for the frosting I use on my cookies. I just use powdered sugar and milk. I put powdered sugar in a bowl and add a tiny bit of milk. I stir that until I get the consistency that I want. The kids love to frost their own cookies and they are finally getting pretty good at it. They always ask me how my cookies look so neatly frosted and I remind them that I have had about 35 years of practice. I have been frosting cookies with my mom since the time I needed a stool to reach the counters.

1 egg
3 3/4cups flour
1tsp baking soda
1/2tsp salt
2Tbsp cocoa powder
1Tbsp cinnamon
2tsp ground ginger
2tsp ground cloves

Instructions

Mix butter and sugar. Add Molasses and egg. Add dry ingredients. Chill for 3 hours.
Roll dough to 1/4 in thickness on a floured board. Cut into shapes Bake at 350 degrees for 7 minutes.
