Oh, The Pioneer Woman got me hungry for this. I have been on the waiting list at the library FOREVER for her cookbook. I finally got it last week and only made it to page 16 before finding something I just HAD to make.
I’m a recent convert to the glories of pico de gallo. I don’t like my food to touch… there, I said it. Yes, if I could eat all of my meals off of the old fashioned lunch trays, I’d be a happy camper. Now, let me say, I like all of these ingredients separately. I would just prefer to not have them mixed up into a big soupy mess. Well, that is, until the summer. I finally broke down and tried this at my favorite Mexican restaurant. Then I immediately called the waiter back and asked for specifics on what was in it.
The tomatoes in my garden did not have their best year, so these are store bought. We had a cooler than normal summer. The cilantro is from my herb garden and still going strong. I only use about a quarter of a jalapeno. My family doesn’t like spicy foods.
After chopping everything, adding lots of salt, and squeeze of lime, the chips are practically jumping into the bowl themselves.

My mouth is watering and it's only breakfast time! I love pico de gallo.
I planted lots of cilantro and peppers this summer so I could make my own pico. My tomatoes were a disappointment this year. We just didn't get enough heat. I still have tons on the vine, but they're green.
